Downtown Golden Gets Regional American Fare with a Latin Twist

Golden, Co. (May 6, 2019) The Buffalo Rose is completing the final phase of its significant renovation in downtown Golden, with the opening of The Buffalo Rose restaurant on May 24. The new restaurant, which boasts an original old west dining room-lounge area, and a large outdoor patio bar, will focus on regionally-inspired American cuisine with a Latin twist and will be open for lunch and dinner.

“We’re incredibly excited to give residents and visitors a truly unique dining experience in downtown Golden,” says Chris Cone, owner of The Buffalo Rose. “Because we were able to preserve this historic space, we’ll be able to share the story of Golden in addition to providing a great meal.”

The Buffalo Rose bar and restaurant is comprised of three original structures that date back to the late 19th and early 20th centuries. The restaurant occupies the space that once housed the International Bowling Saloon (later the Buffalo Rose Saloon), making it one of the oldest bars in Colorado. Most of the original building structures were retained and refurbished, and many historical materials harvested from the job site were repurposed for creative reuse in the renovation. In addition to the historical structures, a newly constructed indoor/outdoor bar has been added alongside a state-of-the-art commercial kitchen.

Guests will be able to dine in this remarkable space on an innovative menu that includes shareables like Chorizo Jalapenos with cherry chipotle glaze; salads like Aztec Caesar with chili rubbed top sirloin and jalapeno blue cornbread; sandwiches like Pulled Lamb Sandwich with smoked lamb shoulder and apple jicama slaw, and entrees like Pan Seared Salmon in hatch chile broth.

“I wanted to bring creative twists on Colorado staples using fresh, local ingredients,” said Jan Vonada, executive chef of The Buffalo Rose. “Our menu will rotate with seasonal items offering something new on a regular basis.”

In addition to the enclosed restaurant space, patrons can access an outdoor patio with firepits, live music, and a full-service bar. The outdoor space also features a stunning retractable glass roof for year-round enjoyment.

The restaurant’s regular operating hours will be Monday – Thursday (11 a.m.-10 p.m.), Friday and Saturday (11 a.m. – Midnight), and Sunday (11 a.m.- 9 p.m.). The Buffalo Rose will hold weekday Happy Hours from 3 p.m. – 6 p.m. Reservations are available through Yelp or at buffalorose.net.
